Practically everybody likes a ice cream cake for celebration occasions.. I have a simple solution that is simply delicious! And it's economical.
INGREDIENTS:
1 box of box of Duncan Hines Dark Chocolate Brownies
1 gallon of vanilla ice cream
1 eight ounce tub of cool whip
Chopped nuts (almonds or walnuts) (optional)
1 package of chocolate covered peanuts coarsely broken.
PREPARATIONS:
1. Make the brownies according to the instructions on the box for the chewy brownies (not the cake-like brownies). You may add chopped nuts.
Bake in a large baking pan approximately 9 x 14 (not the smaller size pan that it calls for.)
2. After brownies cool, stick the pan and all into the freezer.
3. When the brownies are really cold/ or frozen. Put a layer of softened vanilla ice cream over the top of the brownies.
4. Add a layer of chopped (To chop place chocolate covered peanuts in a zip lock bag, and smash lightly with a wooden mallet) over top the layer of ice cream. The layer can be as much as you like or as thin as you like.
Note: You may have to freeze each layer separately if your ice cream is too soft, or not soft enough to spread evenly.
5. Place remainder ice cream over the layered nuts.
6. Add a layer of cool whip to the top.
7. You can use mini M & M's to spell HAPPY BIRTHDAY. Or decorate as you wish. (Optional)
8. Allow the ice cream cake to freeze for a few hours (until firm) before using.
You may wish to let it thaw for a few minutes before cutting, if it is extremely frozen hard.
This ice cream cake recipe can be used with your favorite ice cream amd your favorite brownie/ cake or cookie recipe.
